Outlaw Canyon was named for the moniker Four Mile Canyon adopted during the mining days. As outlaws would hide in the hills and ambush the trains as they came to Boulder loaded with tungsten, lead and gold. Grapes sourced from the Speedy Creek Vineyard in Knights Valley, situated in the mountains between Sonoma and Napa go into this dark, seductive wine. A long, cool growing season left great structure, while making it approachable to drink now. With notes of Blackberry, Blueberry and Mocha, this cab will benefit greatly from another 6 months in the bottle. A silky smooth entry, followed by a mouthful of dark fruits and a minty, herbaceous note, this wine pairs well with grilled New York strip, braised short ribs, or blue cheese. Nuts, dark chocolate, and a leather easy chair are all you need to enhance your “outlaw experience”.

Hand harvested on October 28th, this wine was barrel aged for 21 months in all new French Oak. Bottled unfined and unfiltered, this wine may throw a light sediment with time in the bottle. This is representative of our non-interventionist winemaking techniques and not considered a flaw.
