Our Fumé Blanc is made from the same fruit as the Sauvignon Blanc. Sourced from a tiny hillside vineyard in Bennett Valley, the grapes see foggy mornings and beautiful, sunny afternoons. An elevation of 980 ft gives the wine great structure and backbone, but the southern exposure ripens the fruit fully.

The name Fumé—meaning smoked—typically indicates the wine has been fermented and/or aged in barrel. This is true for our wines. Whole cluster pressed, our wine is then cold settled overnight, and then racked to neutral French oak barrels. Fermented and aged entirely in these barrels, the wine develops a creamy, silky texture, but imparts no oaky flavor from the barrel.

After finishing malolactic fermentation and spending 6 months resting “sur lie”, we racked the wine and went to bottle. A nose of lemongrass and juicy fruit gum, followed by honeyed cream on the palate. This wines pairs well with lighter spicy foods and aged cheeses. Serve chilled to 40 degrees.
